Hop boilers now simmer and bubble in an industrial building where a printing press was once operated. Today, this is where the Martinus micro brewery brews beer according to rather daring recipes. The Nuchter speciality beer literally includes the character of the city. Their beers are served in an increasing number of Groningen pubs, or you could sample some in the brewery’s own public house.

How do you brew beer with a Groningen taste? Plenty of research has been carried out for this. Texts about Groningen and notes about beer flavours have been entered into the computer. Self-discipline, reliability, rebelliousness, result-orientedness and art appreciation turned out to be typical of Groningen. Nothing new so far... The ingredients found using the flavour notes were the actual surprise. Oats were combined with the right kinds of hop varieties. Full, sober and rebellious: this Indian Pale Ale has it all.
